I believe that if the airlines can be compelled to honestly share the data, that data will show that ill elderly are booted off flights a a disproportionate rate. The data would, in my opinion, support a claim of age discrimination. As to your point regarding the elderly being at a higher health risk, if the airlines can prevent the elderly from flying, surely the insurance industry can deny them health care for the same reasons.
