Every airline changes its prices from minute to minute. Much of it has to do with availability. They will sell X number of seats per flight at the lowest fare. When those fares are taken, you will have to either a) pay the price, b) go on a different flight, or c) find another airline with a lower price. You can't really call it "price gouging" since you usually have the option to find another flight, or another airline with a lower price.
