They absolutely do not pull a purchased second seat when there is an oversale. They might ask the person who paid for the extra seat to give it up so that one more person might get on, and give that person denied boarding compensation for doing so in addition to refunding the price of the extra seat, but a paid seat is a paid seat. The airlines will only involuntarily bump someone if they can't get enough volunteers holding paid seats to give them up.
