These things do happen. I have been a flight attendant for over 20 years and I have hit many knees and elbows with the cart. No, we cant see all body parts that are out in the ailse that is in front of the cart. We make announcements to watch your elbows, feet and knees as the cart passes, but as usual our announcements are ignored. When I have hit someone, I say I am sorry and that is the end of it. No one has ever made a stink about it. I am hit all the time by legs, arms and feet and have the bruises to prove it. Not the first "I'm sorry" is said to me. My advice to you is next time keep your knees as well as any other body part out of the aisle to prevent injury to yourself.
